What is Spinach?

Spinach is thought to have originated in Persia (modern Iran), and spread quickly to China and the rest of Asia. Although it is very difficult to grow spinach in a hot climate, Arab agronomists were able to cultivate the plant in the Mediterranean region around the 8th century, using advanced irrigation systems. Because of Arabic influence, spinach became an important crop in Spain long before its popularity moved to the rest of Europe around the 14th century.
