What is Amaranth?


The ancient pseudo-grain Amaranth has a long history of significance in the Americas and beyond. First cultivated in pre-Columbian Latin America thousands of years ago, it was originally used as adornment in pagan rituals before becoming a nourishing staple of the natives’ diets. Today, three species of Amaranthus – two from Mexico and Central America and one from western South America – are increasingly being cultivated for the powerful nutrition found in their seeds and leaves.
