Fluffy Protein Chocolate Chip Cookies
Guilt-free cookies high in protein? Yes please! These Fluffy Protein Chocolate Chip Cookies are light and airy in texture, packed with flavor and totally nutritious. They're sweetened naturally by maple syrup, contain healthy fats from cashew butter and boast an array of superfoods thanks to our Epic Vanilla Lucuma. Recipe makes ~10 cookies.
INGREDIENTS
- 1/3 cup Epic Protein Vanilla Lucuma
- 1/4 cup melted coconut oil
- 1/3 cup maple syrup
- 1/3 cup cashew butter
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 cup almond flour
- 1 tsp baking soda
- 2/3 cup chocolate chips
DIRECTIONS
- Preheat oven to 350 F.
- Line a baking sheet with parchment paper.
- In a mixing bowl, add melted coconut oil, maple syrup, cashew butter, applesauce and vanilla extract.
- Add in Epic Protein, almond flour and baking soda. Stir to combine.
- Fold in chocolate chips.
- Using a large spoon, scoop balls of dough onto lined baking sheet, 2 inches apart.
- Bake for 9 to 10 minutes.
- Allow cookies to cool for 10 minutes before transferring to a cooling rack to finish cooling.
