Chunky Monkey Protein Bites
Indulge in a guilt-free treat with these Protein-Packed Chunky Monkey Bites! The rich flavors of banana, chocolate and nuts deliver a satisfying burst of energy. Packed with high-quality protein, they're perfect for a quick snack or post-workout refuel.
INGREDIENTS
- 2 cups raw walnuts
- 1 cup medjool dates, pitted
- 1/3 cup Epic Protein Vanilla Lucuma
- 2 large ripe bananas
- 1 tbsp coconut oil
- Chocolate chips
- Flaky salt
DIRECTIONS
- Add walnuts, dates, Epic Protein and bananas to a blender and pulse.
- Gently fold in chocolate chips.
- Scoop the mixture into balls and add them a parchment lined baking sheet.
- Place in freezer for at least 20 minutes.
- Melt coconut oil and chocolate chips together in microwave in 15 second intervals.
- Dip protein bites into chocolate mixture to coat and place back on parchment paper.
- Sprinkle with crushed walnuts and flaky salt.
