Almond Butter and Blueberry Jam Protein Bars

These Almond Butter and Blueberry Jam Protein Bars are vegan, gluten-free and packed with protein from our Epic Protein Original. Meal prep a batch for the week ahead to always have a healthy snack on hand!

INGREDIENTS

Base Layer

Middle Layer

  • 1/2 cup creamy, unsweetened almond butter
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil

Top Layer

DIRECTIONS
    1. In a food processor, roughly blend oats. They will blend more with the other ingredients!
    2. Add the rest of the ingredients for the bottom layer. Mix until they start to form a ball.
    3. Line a baking dish (I.e. one you’d use to bake bread) with parchment paper to prevent sticking!
    4. Press the mix into the dish, make sure to distribute evenly.
    5. Freeze for at least 10 minutes while you make the next layer.
    6. Roughly clean the food processor before you make the middle layer! Scrape edges as needed.
7. Spread this on top of the bottom layer and re-freeze for at least 10 minutes.
  • Finally, prep the food processor for the top layer. Add the blueberries frozen.
  • Spread the top layer over the bottom and middle layer and freeze for at least a few hours (or overnight)!
  • Once they are ready, allow 10-15 minutes to thaw before cutting!
