Almond Butter and Blueberry Jam Protein Bars
These Almond Butter and Blueberry Jam Protein Bars are vegan, gluten-free and packed with protein from our Epic Protein Original. Meal prep a batch for the week ahead to always have a healthy snack on hand!
INGREDIENTS
Base Layer
- 1 1/2 cup oats blended to a flour
- 2 scoops Epic Protein : Original
- 4 tbsp coconut oil
- 1 tbsp coconut sugar
Middle Layer
- 1/2 cup creamy, unsweetened almond butter
- 2 tbsp maple syrup
- 1 tbsp coconut oil
Top Layer
- 1 cup frozen blueberries
- 1/2 tsp vanilla extract
- Cinnamon
- 2 scoops Epic Protein : Original
- 1 tbsp coconut oil
DIRECTIONS

- In a food processor, roughly blend oats. They will blend more with the other ingredients!
- Add the rest of the ingredients for the bottom layer. Mix until they start to form a ball.
- Line a baking dish (I.e. one you’d use to bake bread) with parchment paper to prevent sticking!
- Press the mix into the dish, make sure to distribute evenly.
- Freeze for at least 10 minutes while you make the next layer.
- Roughly clean the food processor before you make the middle layer! Scrape edges as needed.
- Finally, prep the food processor for the top layer. Add the blueberries frozen.
- Spread the top layer over the bottom and middle layer and freeze for at least a few hours (or overnight)!
- Once they are ready, allow 10-15 minutes to thaw before cutting!
