What is Jerusalem Artichoke?
Jerusalem artichoke, also known as sunchoke, is actually the tuber of a perennial flower native to North America. In 1585, Sir Walter Raleigh noticed Native Americans cultivating these roots, and by the early 17th century, they were introduced to the European market. Known for years as the “poor man’s vegetable” because of its prevalence during World War II, the sunchoke has only recently regained popularity as a health food.
