Inspired by Lindsay Cotter of @cottercrunch, these Shamrock Shake Protein Bites are packed with nutrients. Matcha is the star of this recipe and offers a myriad of health benefits, including high concentrations of antioxidants called catechins, which promote overall well-being, enhance mental focus, boost metabolism, and provide a sustained energy release without the jittery effects associated with traditional caffeinated beverages. 

INGREDIENTS

  • 1 cup coconut or almond flour
  • 1/2 cup banana chips
  • 1/4 cup Epic Protein Mindful Matcha + 1 scoop to coat
  • 1/2 cup nut butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp mint or spearmint extract
  • 1/2 cup honey
  • 1 tbsp matcha powder to coat
    DIRECTIONS
    1. Add banana chips to food processor or blender and pulse until they reach a powder-like consistency.
    2. Add banana chips, flour and Epic Protein to a large bowl and mix.
    3. Add nut butter, vanilla extract, mint extract and honey and mix again.
    4. Roll mixture into 25-30 small bite-size balls.
    5. Freeze for 15 minutes.
    6. Combine matcha powder and 1 scoop of Epic Protein in a small bowl.
    7. Coat the bites in the dry matcha mixture.
    8. Enjoy and store in refrigerator!
