Chocolate Protein Thin Mints
Made with wholesome ingredients, these Chocolate Protein Thin Mints are a guilt-free indulgence. Perfectly balancing a rich chocolate flavor with a refreshing minty taste, they cater to those with wellness goals and/or dietary restrictions while still delivering big time on taste.
INGREDIENTS
- 1 cup almonds
- 1 cup pitted Medjool dates
- 1/2 cup cacao powder
- 1 scoop Epic Protein Chocolate Maca
- 1 tbsp maple syrup
- 1/2 tsp peppermint extract
- 1/2 tsp sea salt
- 1/4 cup reserved date water (only use if your dough is too dry)
- 1 cup sugar free chocolate chips
- 1 tsp coconut oil
DIRECTIONS
- Soak your pitted dates in hot water for 30 minutes to soften.
- Once done soaking, drain and reserve the water.
- To a food processor, add almonds, soaked dates, cacao powder, Epic Protein, maple syrup, peppermint extract, salt, and process until you get a sticky consistency.
- If the dough is too dry add some of the date water to smooth it out. If the dough is too wet add more cacao powder.
- Flatten the dough to create one large sheet about 1/2 an inch thick and cover with plastic wrap for at least 30 minutes.
- After cooling, add the dough between two pieces of parchment paper and smooth it out, keeping the layer about 1/2 an inch thick.
- Using a circle cookie cutter, cut out the dough into 18 circles and freeze for 15 minutes.
- Melt chocolate chips with coconut oil.
- Dip the cookies in melted chocolate and freeze until the chocolate is set.
- Enjoy or keep stored in freezer in an airtight container!
