Protein Sugar Cookie Truffles
These Protein Sugar Cookie Truffles inspired by Cooking By Kylie are a healthier version of the holiday treat you know and love. The best part? No baking required!
INGREDIENTS
- 1/2 cup unsweetened applesauce
- 3 tbsp Kite Hill vegan cream cheese
- 1/4 cup Cocojune plain yogurt
- 1 tsp vanilla extract
- 1/4 cup sugar
- 2/3 cup almond flour
- 1 cup Epic Protein Vanilla Lucuma
- 1 cup white chocolate (topping)
- Sprinkles (topping)
DIRECTIONS
- In a medium bowl, mix together applesauce, cream cheese, yogurt, vanilla, sugar, almond flour and Epic Protein until a dough is formed.
- Fold in sprinkles.
- Roll dough into 12 balls.
- Let set in the refrigerator for at least 30 minutes.
- Melt white chocolate in microwave in 30 second intervals.
- Coat each truffle with white chocolate.
- Top with sprinkle as desired.
