These Protein-Packed Buckeyes are the perfect mix of indulgence and function. Creamy peanut butter, Epic Protein Vanilla Lucuma and a touch of honey form a rich, protein-packed base. Rolled in sprinkles, shredded coconut, crushed peanuts and/or mini chocolate chips, they’re as fun to make as they are to enjoy. Finished with a drizzle of melted chocolate, they’re a treat that’s both satisfying and smart.  

INGREDIENTS

  • 1 cup peanut butter
  • 1 tbsp vanilla extract
  • 1/2 cup Epic Protein Vanilla Lucuma
  • 2 tbsp honey
  • 3/4 cup chocolate chips
  • 1/2 tbsp coconut oil
  • Sprinkles
  • Shredded coconut
  • Crushed peanuts
  • Crushed chocolate
  • Mini chocolate chips
    DIRECTIONS
    1. Combine peanut butter, vanilla, protein powder, honey, and 1.5 tbsp water in a bowl and mix.
    2. Scoop dough in your hands and roll it into a ball; place them on a baking sheet lined with parchment paper.
    3. Place the balls in the freezer for around 30 mins.
    4. Place chocolate chips and coconut oil in a small bowl and microwave in 20-second increments until melted.
    5. Place a ball on the end of a fork and dip it into the melted chocolate, leaving a ring at the top.
    6. Dip in your toppings (optional).
    7. Let dry and enjoy!
