These Protein Cinnamon Roll Pancakes are a delightful fusion of indulgence and nutrition, perfect for breakfast lovers and fitness enthusiasts alike. They combine the rich, comforting flavors of a classic cinnamon roll with a high-protein pancake base, ensuring you start your day with a balanced and satisfying meal. Top them with a drizzle of cream cheese glaze for an extra touch of decadence!

INGREDIENTS

  • 1 cup all-purpose flour
  • 2 tsp baking powder⁠
  • 1 tbsp sugar⁠
  • 1 scoop Epic Protein Vanilla Lucuma
  • 1 tbsp coconut oil⁣⁠
  • 1 cup coconut milk
  • 1 tsp vanilla⁠
  • Dash of salt⁠ ⁠ 
  • 3 tbsp vegan butter⁣⁠
  • 1/4 cup coconut sugar⁠
  • 1 tsp ground cinnamon⁣⁠ ⁣⁠
  • 1/3 cup vegan cream cheese⁠ (icing)
  • 2 tbsp maple syrup⁠ (icing)
  • 2 tbsp coconut milk (icing)
    DIRECTIONS
    1. Add flour, baking powder, sugar, Epic Protein, coconut oil, coconut milk, vanilla and salt to a large bowl and whisk together until smooth. ⁠
    2. Add vegan butter, coconut sugar and ground cinnamon to a bowl and whisk together until smooth.
    3. Transfer the cinnamon filling to a piping bag and cut a small hole at the end.
    4. Oil a medium-sized pan on low heat.
    5. Once warm, add 1/4 cup of the pancake mix to the pan.
    6. Immediately pipe the cinnamon filling onto the batter in a spiral.
    7. Cook on low heat for 3-5 minutes with a lid to cook through (flipping may cause the sugar to burn, so we recommend using this method).
    8. Combine all icing ingredients together and whisk until smooth.
    9. Pour the icing over the pancakes.
    10. Enjoy!
