Protein Cinnamon Roll Pancakes

INGREDIENTS
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tbsp sugar
- 1 scoop Epic Protein Vanilla Lucuma
- 1 tbsp coconut oil
- 1 cup coconut milk
- 1 tsp vanilla
- Dash of salt
- 3 tbsp vegan butter
- 1/4 cup coconut sugar
- 1 tsp ground cinnamon
- 1/3 cup vegan cream cheese (icing)
- 2 tbsp maple syrup (icing)
- 2 tbsp coconut milk (icing)
DIRECTIONS
- Add flour, baking powder, sugar, Epic Protein, coconut oil, coconut milk, vanilla and salt to a large bowl and whisk together until smooth.
- Add vegan butter, coconut sugar and ground cinnamon to a bowl and whisk together until smooth.
- Transfer the cinnamon filling to a piping bag and cut a small hole at the end.
- Oil a medium-sized pan on low heat.
- Once warm, add 1/4 cup of the pancake mix to the pan.
- Immediately pipe the cinnamon filling onto the batter in a spiral.
- Cook on low heat for 3-5 minutes with a lid to cook through (flipping may cause the sugar to burn, so we recommend using this method).
- Combine all icing ingredients together and whisk until smooth.
- Pour the icing over the pancakes.
