
Plant-Powered Greens Salad Bowl
This Plant-Powered Greens Salad Bowl is a hearty, nutrient-rich dish that’s anything but boring. Loaded with roasted veggies, fluffy quinoa, fresh greens and a zesty herb dressing, it’s finished with a crunchy handful of our Cheddar Cheeze Probiotic Almonds for a gut-friendly, flavor-packed upgrade. Serve it warm or cold for an easy lunch or dinner that’s vibrant and totally satisfying.
SALAD INGREDIENTS
- ½ cup cooked quinoa
- 1 small head of broccoli, chopped into florets
- 1 zucchini, sliced
- 1 small bunch of asparagus, chopped
- 2 handfuls of mixed greens
- 1 ½ tablespoons olive oil, divided
- 1 bag of Cheddar Cheeze Probiotic Almonds, roughly chopped
DRESSING INGREDIENTS
- ⅓ cup extra virgin olive oil
- Juice of 1 lemon
- 1 cup of basil leaves
- 1 cup of mint leaves
- 1 garlic clove
- Small pinch of salt
DIRECTIONS
- Preheat the oven to 425 F.
- Toss the zucchini, broccoli and 1 tbsp of the olive oil in a bowl until evenly coated.
- Spread on a baking sheet lined with parchment paper and season with salt.
- On a separate baking sheet, add asparagus with the remaining oil. Toss and season with salt.
- Place both baking sheets in the oven and roast for 15 minutes.
- Meanwhile, make the dressing by adding all ingredients to a high speed blender. Blend until smooth.
- Serve the quinoa on the bottom of a salad bowl, add the greens, roasted veggies, almonds and a drizzle of the dressing.
- Serve warm or cold and enjoy!
