
Pineapple Protein Energy Bites

Naturally sweet dates and juicy pineapple bring the sunshine, while oats, coconut and ground flaxseed deliver lasting energy and fiber. A scoop of Simple Pea Protein boosts each bite with clean, plant-based protein, making them an ideal pre-workout snack, afternoon fuel or guilt-free treat. INGREDIENTS
- 1 cup whole pitted dates
- 1 cup rolled oats
- ½ cup drained pineapple bits
- ½ cup unsweetened coconut flakes
- ¼ cup ground flaxseed
- 1 scoop Simple Pea Protein
- 1-2 tbsp milk of choice
DIRECTIONS
- Add dates, oats, pineapple, coconut, flaxseed and Simple Pea Protein to a high-speed food processor or blender. Blend until a dough-like consistency forms.
- Scrape down the sides as needed.
- Add milk 1 tbsp at a time if the dough is too dry.
- With a small ice-cream scoop, scoop out the dough and form into balls.
- Store in the refrigerator and enjoy!
