Made with almond butter, pumpkin puree and our Simple Pumpkin Seed Protein, they pack a nourishing punch of plant-based protein in every bite. Warm pumpkin pie spice and creamy chocolate chips make them taste like a cozy cookie—perfect for snacking, sharing or keeping on hand in the fridge for a quick grab-and-go treat.
INGREDIENTS
- ½ cup creamy almond butter
- ¼ cup pumpkin puree
- ¼ cup honey
- ½ tsp vanilla extract
- 1 cup blanched almond flour
- 2 scoops Simple Pumpkin Seed Protein Powder
- 2 tsp pumpkin pie spice
- ¼ cup white or dark chocolate chips
DIRECTIONS
- Add the pumpkin puree, almond butter, and honey to a large mixing bowl and mix until well combined.
- Add the almond flour, protein powder, and pumpkin pie spice and mix until a dough-like consistency forms.
- Fold in the white chocolate chips.
- Using a small ice cream scoop, scoop out the dough and roll into balls.
- Sprinkle extra pumpkin pie spice on top.
- Store in the refrigerator and enjoy!
