Made with almond butter, pumpkin puree and our Simple Pumpkin Seed Protein, they pack a nourishing punch of plant-based protein in every bite. Warm pumpkin pie spice and creamy chocolate chips make them taste like a cozy cookie—perfect for snacking, sharing or keeping on hand in the fridge for a quick grab-and-go treat.

INGREDIENTS

  • ½ cup creamy almond butter
  • ¼ cup pumpkin puree
  • ¼ cup honey
  • ½ tsp vanilla extract
  • 1 cup blanched almond flour
  • 2 scoops Simple Pumpkin Seed Protein Powder
  • 2 tsp pumpkin pie spice
  • ¼ cup white or dark chocolate chips
    DIRECTIONS
    1. Add the pumpkin puree, almond butter, and honey to a large mixing bowl and mix until well combined.
    2. Add the almond flour, protein powder, and pumpkin pie spice and mix until a dough-like consistency forms.
    3. Fold in the white chocolate chips.
    4. Using a small ice cream scoop, scoop out the dough and roll into balls.
    5. Sprinkle extra pumpkin pie spice on top.
    6. Store in the refrigerator and enjoy!
