Brighten your day with these tangy-sweet Lemon Raspberry Collagen Bars! Made with a dreamy combo of coconut flour, Epic Protein Pro Collagen and a touch of coconut sugar, these bars bring the perfect balance of nutrients and indulgence. Add a zesty layer of lemon curd and a sprinkle of white chocolate chunks, and you’ve got a treat that’s both satisfying and delicious. Perfect for a post-workout snack or a guilt-free dessert!  

INGREDIENTS

  • ½ cup coconut flour
  • ½ cup Epic Protein Pro Collagen
  • 3 tablespoons coconut sugar
  • 4 tablespoons lemon curd
  • ⅓ cup white chocolate chunks or chips
    DIRECTIONS
    1. Mix the coconut flour, collagen, and sugar in a bowl until well combined.
    2. Add the lemon curd, then knead with your hands for 1 minute. Add 1 teaspoon of milk or water if needed.
    3. Press the dough into a rectangular baking pan and freeze for 30 minutes.
    4. Once frozen, cut into 6 bars.
    5. Place them back in the freezer.
    6. Melt the white chocolate chips in a microwave, 20 seconds at a time, until fully melted.
    7. Dip the bars in the white chocolate or add a drizzle over the bars.
    8. Serve and enjoy!
