
Lemon Raspberry Collagen Bars

INGREDIENTS
- ½ cup coconut flour
- ½ cup Epic Protein Pro Collagen
- 3 tablespoons coconut sugar
- 4 tablespoons lemon curd
- ⅓ cup white chocolate chunks or chips
DIRECTIONS
- Mix the coconut flour, collagen, and sugar in a bowl until well combined.
- Add the lemon curd, then knead with your hands for 1 minute. Add 1 teaspoon of milk or water if needed.
- Press the dough into a rectangular baking pan and freeze for 30 minutes.
- Once frozen, cut into 6 bars.
- Place them back in the freezer.
- Melt the white chocolate chips in a microwave, 20 seconds at a time, until fully melted.
- Dip the bars in the white chocolate or add a drizzle over the bars.
- Serve and enjoy!
