INGREDIENTS
- 2 eggs
- ⅔ cup peanut butter
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- ½ cup Epic Protein Vanilla Lucuma
- ½ teaspoon baking soda
- Small pinch of salt
- ½ cup dark chocolate chips
DIRECTIONS
- Preheat the oven to 350°F.
- In a large mixing bowl, whisk the eggs, peanut butter, brown sugar and vanilla extract until smooth.
- Add the Epic Protein, baking soda and salt - mix until well combined.
- Fold in the chocolate chips. The dough should be thick!
- Shape the dough into roughly 2-inch-long strips, about ½ inch thick. Form them using your hands.
- Place dough strips on a baking sheet lined with parchment paper, ensuring the cookie fries are about 2 inches apart.
- Bake for 7-9 minutes.
- Serve with flaky sea salt and dipping sauces such as caramel or chocolate sauce.
