High-Protein Oatmeal Cookies
These High-Protein Oatmeal Cookies are a nutritious and delicious dessert or snack, combining the heartiness of oats, bananas and peanut butter with the muscle-building benefits of Epic Protein. They're ideal for fitness enthusiasts or anyone looking to increase nutrients without sacrificing flavor!
INGREDIENTS
- 2 large ripe bananas, mashed
- 1/3 cup natural peanut butter
- 2 cups rolled oats
- 2 scoops Epic Protein Vanilla Lucuma
- 1 tbsp chia seeds
- 1/8 cup coconut oil, melted
- 1/8 cup maple syrup
- 1/4 cup chocolate chips
- 1/4 cup raisins
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
DIRECTIONS
- Preheat oven to 325°F.
- Line a large cookie sheet with parchment paper.
- In a large bowl, mash ripe bananas until smooth.
- To the mashed bananas, add the peanut butter, rolled oats, Epic Protein, chia seeds, melted coconut oil, maple syrup, chocolate chips, raisins, vanilla extract, cinnamon and salt.
- Fold everything together until well combined.
- Shape into 20 cookies and place on the parchment-lined cookie sheet.
- Flatten each cookie with the back of a spoon to be about 1/2 an inch thick.
- Bake for 10-12 minutes until the bottoms start to brown.
- Move the cookies to a wire rack to cool completely.
- Enjoy or store in an airtight container at room temperature for 4-5 days or in the fridge for about a week!
