
High Protein Crepes With Kiwi Compote
Light, golden and packed with superfoods, these high-protein crepes are the perfect way to start your day! Serve them with a bright and zesty kiwi-honey compote, a dollop of coconut yogurt and fresh kiwi slices for a naturally sweet, nourishing treat!
INGREDIENTS
- 1 scoop Epic Protein Vanilla Lucuma
- 1 cup water - 1 ¼ cups all-purpose flour
- 1 tablespoon arrowroot starch
- 1 cup almond or oat milk
- 2 tablespoons coconut oil
- Sliced kiwis for serving
- Coconut yogurt for serving
- 5 kiwis, peeled and chopped
- 2 tablespoons honey
- 2 teaspoons lemon juice
DIRECTIONS
- Start by making the kiwi compote. Add kiwis, honey and lemon juice to a small pot and cook over medium heat.
- Bring to a boil, then simmer for 10-15 minutes, mixing occasionally.
- After cooking, lightly mash the kiwis. Remove from heat and set aside.
- Whisk the protein powder and ¼ cup of water in a small bowl. Set aside.
- In a large bowl, add the flour and arrowroot starch. Whisk until well combined.
- Add the protein mixture, remaining water, and coconut oil. Whisk. Add the milk and whisk again until the batter is smooth.
- Heat a nonstick pan over medium heat. Pour ¼ cup of the batter into the hot pan, then immediately remove the pan from heat and rotate it in circles until the batter spreads evenly over the pan.
- Cook over medium/low heat for 5 minutes, then flip and cook for 2-3 minutes.
- Fold into triangles and stuff with coconut yogurt, kiwi compote, or fresh kiwi slices.
- Serve with powdered sugar and enjoy!
