Creamy peanut butter blended with our Pumpkin Seed Vanilla Protein adds a boost of plant-powered nutrition, while cinnamon and hemp seeds bring a little crunch and spice. Roll it all up in a warm tortilla with a fresh banana, slice and enjoy—perfect for breakfast, a post-workout bite or an on-the-go pick-me-up.

INGREDIENTS

  • ½ cup creamy almond butter
  • ¼ cup pumpkin puree
  • ¼ cup honey
  • ½ tsp vanilla extract
  • 1 cup blanched almond flour
  • 2 scoops Simple Pumpkin Seed Vanilla Protein Powder
  • 2 tsp pumpkin pie spice
  • ¼ cup white or dark chocolate chips
    DIRECTIONS
    1. Add the pumpkin puree, almond butter and honey to a large mixing bowl and mix until well combined.
    2. Add the almond flour, protein powder and pumpkin pie spice and mix until a dough-like consistency forms.
    3. Fold in the white chocolate chips.
    4. Using a small ice cream scoop, scoop out the dough and roll into balls.
    5. Sprinkle extra pumpkin pie spice on top.
    6. Store in the refrigerator and enjoy!
