
High-Protein Peanut Butter Banana Roll Ups
A fun twist on a classic combo, these Peanut Butter Banana Roll-Ups are equal parts snack and treat. Creamy peanut butter blended with our Pumpkin Seed Vanilla Protein adds a boost of plant-powered nutrition, while cinnamon and hemp seeds bring a little crunch and spice. Roll it all up in a warm tortilla with a fresh banana, slice and enjoy—perfect for breakfast, a post-workout bite or an on-the-go pick-me-up.
INGREDIENTS
- ½ cup creamy almond butter
- ¼ cup pumpkin puree
- ¼ cup honey
- ½ tsp vanilla extract
- 1 cup blanched almond flour
- 2 scoops Simple Pumpkin Seed Vanilla Protein Powder
- 2 tsp pumpkin pie spice
- ¼ cup white or dark chocolate chips
DIRECTIONS
- Add the pumpkin puree, almond butter and honey to a large mixing bowl and mix until well combined.
- Add the almond flour, protein powder and pumpkin pie spice and mix until a dough-like consistency forms.
- Fold in the white chocolate chips.
- Using a small ice cream scoop, scoop out the dough and roll into balls.
- Sprinkle extra pumpkin pie spice on top.
- Store in the refrigerator and enjoy!
