Eggnog Baked Oatmeal

INGREDIENTS
- 1 scoop Epic Protein Vanilla Lucuma
- 1/2 cup certified gluten-free quick oats
- 1/2 tsp baking powder 1/4 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 cup dairy-free eggnog
- 1/4 cup unsweetened almond milk
- 1 egg
- 1 tbsp maple syrup
- 1/4 cup plain Greek yogurt (icing)
- 1 tbsp sugar-free powdered sugar (icing)
- Splash of eggnog for taste (icing)
DIRECTIONS
- Preheat oven to 350 degrees F and grease a small dish.
- Blend your oats on high to create a fine powder.
- Add all remaining wet and dry ingredients and blend until combined.
- Pour into your already greased dish and bake for 25-30 minutes.
- Top with icing, cinnamon, and nutmeg.
