Topped with a Greek yogurt icing and a splash of eggnog, it’s a delicious reminder that healthy can still feel like a treat.  

INGREDIENTS

  • 1 scoop Epic Protein Vanilla Lucuma
  • 1/2 cup certified gluten-free quick oats
  • 1/2 tsp baking powder 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 cup dairy-free eggnog
  • 1/4 cup unsweetened almond milk
  • 1 egg
  • 1 tbsp maple syrup
  • 1/4 cup plain Greek yogurt (icing)
  • 1 tbsp sugar-free powdered sugar (icing)
  • Splash of eggnog for taste (icing)
    DIRECTIONS
    1. Preheat oven to 350 degrees F and grease a small dish.
    2. Blend your oats on high to create a fine powder.
    3. Add all remaining wet and dry ingredients and blend until combined.
    4. Pour into your already greased dish and bake for 25-30 minutes.
    5. Top with icing, cinnamon, and nutmeg.
    6. Enjoy!
