INGREDIENTS

  • 2 cups unsweetened coconut yogurt
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup maple syrup
  • 3 tbsp chopped pecans
  • 1/4 cup dark chocolate chips
  • 1 scoop Vanilla Pumpkin Seed Protein 
    DIRECTIONS
    1. Line a baking sheet with parchment paper.
    2. Mix yogurt, pumpkin puree, pumpkin pie spice, maple syrup and protein powder in a bowl. Taste and adjust sweetness as needed.
    3. Spread mixture onto prepared sheet in an even layer, roughly 1/2 inch thick.
    4. Sprinkle on chopped pecans and chocolate chips.
    5. Place the tray in the freezer for 2-4 hours or until solid.
    6. Break into pieces or cut with a knife.
    7. Store in the freezer until ready to eat and enjoy!
