Think of this as apple pie in a jar, but with real-food nutrition built in. Rolled oats, chia seeds and Epic Protein Vanilla Lucuma come together for a fiber- and protein-rich base that keeps you full for hours. Topped with soft maple-cinnamon apples and a spoonful of almond butter, it’s a simple make-ahead breakfast that’s warm, comforting and packed with flavor.

INGREDIENTS

  • 2 cups rolled oats (pro tip: if you get quick cook rolled oats, no overnight time needed)
  • 1/4 cup chia seeds
  • 1/2 cup Epic Protein Vanilla Lucuma
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups milk of choice
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract pinch sea salt
  • 2 tb creamy almond butter (or peanut butter or cashew butter)
  • Apple topping 2 apples, diced into small pieces 2 tb maple syrup 1 tsp cinnamon
    DIRECTIONS
    1. In a large mixing bowl, combine rolled oats, chia seeds, Epic Protein, cinnamon, nutmeg, milk, maple syrup, vanilla extract and almond butter and stir until smooth. 
    2. Divide the mixture evenly into 4 jars or containers.
    3. Dice apples and add them to a small saucepan over low–medium heat.
    4. Pour in the maple syrup, sprinkle in the cinnamon and stir to coat.
    5. Cover and cook for 10–12 minutes, or until the apples are soft and caramelized.
    6. Spoon the warm apple mixture over each jar of oats, then cover and refrigerate.
    7. Alternatively, store the apples separately and add them just before serving.
    8. When you’re ready to enjoy, finish with a generous drizzle of almond butter.
