Apple Pie Overnight Protein Oats
Think of this as apple pie in a jar, but with real-food nutrition built in. Rolled oats, chia seeds and Epic Protein Vanilla Lucuma come together for a fiber- and protein-rich base that keeps you full for hours. Topped with soft maple-cinnamon apples and a spoonful of almond butter, it’s a simple make-ahead breakfast that’s warm, comforting and packed with flavor.
INGREDIENTS
- 2 cups rolled oats (pro tip: if you get quick cook rolled oats, no overnight time needed)
- 1/4 cup chia seeds
- 1/2 cup Epic Protein Vanilla Lucuma
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 cups milk of choice
- 1/4 cup maple syrup
- 2 tsp vanilla extract pinch sea salt
- 2 tb creamy almond butter (or peanut butter or cashew butter)
- Apple topping 2 apples, diced into small pieces 2 tb maple syrup 1 tsp cinnamon
DIRECTIONS
- In a large mixing bowl, combine rolled oats, chia seeds, Epic Protein, cinnamon, nutmeg, milk, maple syrup, vanilla extract and almond butter and stir until smooth.
- Divide the mixture evenly into 4 jars or containers.
- Dice apples and add them to a small saucepan over low–medium heat.
- Pour in the maple syrup, sprinkle in the cinnamon and stir to coat.
- Cover and cook for 10–12 minutes, or until the apples are soft and caramelized.
- Spoon the warm apple mixture over each jar of oats, then cover and refrigerate.
- Alternatively, store the apples separately and add them just before serving.
- When you’re ready to enjoy, finish with a generous drizzle of almond butter.
