INGREDIENTS
- 1 (10-ounce) package mixed salad greens
- 1 apple
- 1 bag Italian Truffle Probiotic Almonds
- ½ cup vegan/regular crumbled feta cheese
- ¼ cup chopped red onion
- ¼ cup raisins
- 1 ½ cups fresh raspberries
- ½ cup olive oil
- ¼ cup red wine vinegar
- 1 tsp dijon mustard
- Pinch of salt
DIRECTIONS
- Add raspberries, olive oil, red wine vinegar, dijon mustard and a pinch of salt to a food processor and blend until smooth.
- Chop the apple and red onion into small pieces.
- Toss mixed greens, chopped apple, red onion, Italian Truffle Probiotic. Almonds, raisins and vegan feta into a salad bowl.
- Pour over raspberry vinaigrette.
