
Arugula Basil Salad
This sweet and tangy salad combines fresh arugula, basil, cherry tomatoes and sweet corn with a delightful dressing of maple syrup, lemon juice and spices for a delicious, garden fresh salad. Enjoy!
INGREDIENTS
For the Salad
- 2 cups arugula
- 1/2 cup basil
- 1/2 cup cilantro
- 2 tablespoon sunflower seeds
- 1/2 cup halved cherry tomatoes
- 1 cup red beans
- 1 cup sweet corn
- 1 teaspoon maple syrup
- 2 teaspoons lemon juice
- 1 tablespoon antioxidant omega oil blend
- Pinch of Himalayan salt
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
DIRECTIONS
- Toss all the salad ingredients in a large bowl.
- Mix up the dressing in a small bowl, and pour over the salad.
- Enjoy!
